Take the Cercanias to El Escorial from Madrid, travel time is about 50 minutes.
Uphill from El Escorial, then undulating for 20km until the lowlands west of Madrid. Open countryside, little shade, take lots of water. You can also refill at village fountains (every 10km or so).
Madrid is surrounded by bicycle-unfriendly motorways. The route through Boadilla del Monte avoids these. An alternative is to finish in Casa del Campo.
