Well done route in the regions crossed. A lot of interest at the historical level (fiefs of the Middle Ages, ancient centers of Catholic influences ....).
I do not think, however, that the majority of the trip is off road, and when they are, there is rather interest in driving slowly in respect of the environment (nature reserves, hunting, pasture, sand quarry with trucks ...).
I also came across some closed barriers that it was better not to cross (Natura 2000)!
The mountain roads are however exciting but some have rather tricky turns when you do supermotard, so be careful.
I made the trip from Belgium (Namur) with a DR 650 and I started to take the secondary roads from Causses (Auvergne). In these conditions, I would say that it takes fifteen days to make the trip comfortable (with a direct return, for my part, not taking the toll roads and therefore the fast and busy) .
Not having the necessary time (12 days), I turned back to the St-André lagoon and took some freedom on & off-road (which did not always save me time ...).
Basically, I think it takes between 300 and 350km for a day by going comfortable (6 to 8 driving hours a day).
In short, the course is interesting and could be done with a motorcycle more "road type" style BMW GS seen the length.
Nice course, I just regret not having gone to Sagres (and not having taken a gas mask or a more powerful motorcycle to more easily double polluting diesels!).
