Down the back of Maroon is a pleasant walk when dry. We did it the other way round up May then overnight at Paddy's then Maroon up the slabs and down the front.

Had almost perfect conditions, the creek was running due to recent rain but the sun was out with plenty of dry rock to walk on.
Will have to try some of your NSW walks sometime.

Can you tell me about water sources along the way?

I imagine it’s all pretty dry at the moment, normally there will be rock pools as you descend down the slabby creek on the Western side of Mt Maroon and a substantial creek near the Paddy’s plain camp site.

I have done this hike several times over that last 10 years and have always found drinkable water at the Paddy's Plain Campsite and at least 1/3 the way up Maroon. That is taking the right branch.
